Ode to chicory…

…early in the morning.

Even through autumn, you can still find them peeking out of the ditches on the side of the road.

These little flowers always brighten my day when I’m sitting at a red light or a stop sign.

Chicory root is frequently roasted and used as a substitute or additive to coffee.

It is widely known this was used by soldiers in the Civil War as well as WW2 as an alternative to coffee. They would use dandelion root has well. I have always wanted to try it, but I don’t have a safe place to forage it. Next year, I plan on growing chicory so that I can safely harvest and try it out. Roasted dandelion root is delicious, but I don’t think it gets as dark and woodsy as the chicory. It is also full of inulin, which I’m always a big fan of in tea - making it a great prebiotic.

Any root high in inulin will make your land more fertile, giving good bacteria a nutrient source and creating a healthier soil with more yield. Having it as a widespread wildflower to forage on your land is also beneficial for the animals, as leaves are high in protein and is also known to be anti-parasitic.

I think it is so beautiful, I love the periwinkle color.
